Where there’s smoke, there’s usually good barbecue, and the corner of the big-box parking lot that the Up in Smoke trailer occupies most weekends (call ahead) was full of swirling, fragrant plumes from the small fleet of smokers clustered around it. The smoke wreathed around the customers lining up at the window and on down Liberty Road. It did not assert itself much in the ribs ($15 for a half-slab), however, and chewing the far-from-tender meat off the bones offered scant pleasure. It proved a fortuitous choice to have ordered the barbecue sauce, an unsubtle blend of far-too-sweet and red-pepper burn, on the side. A pit-beef sandwich ($6.25) ordered rare came medium; though still juicy, it didn’t outstrip other options on the west side of the Pit Beef Belt. A side of greens ($3.25) contained good meaty flavor; a side of potato salad ($3.25) was slightly sweet and creamy but indistinct from standard takeout fare. Not bad, but not quite worth a drive across town.
