A notably colorful—pink, more specifically—member of Baltimore’s burgeoning fleet of food trucks, the Jolly Pig advertises itself as “Home Cooking on Wheels.” But, frankly, we can’t remember the last time mom ever made us some Korean barbecue pulled pork tacos when we were home. In fact, with a variety of fascinating twists on the traditional pulled pork taco—the Bavarian boasts kraut and apple; the Jamaican Jerk incorporates a spicy pineapple salsa—the Jolly Pig attracts only the more adventurous types. When we found the truck, which began operating early last year, situated near an intersection in Mount Vernon, we thought we’d embrace our gustatory wanderlust and try the famous Korean barbecue and the Peking Pork ($5 each, $9 for two, three for $12), a combination that manager Joann Calwell calls “the classic duo.” Calwell also gave us fair warning that the former was as spicy as she could cook it without having us sign a waiver. No kidding: At first deceptively sweet, the Korean barbecue sauce packs a serious punch that almost distracted us from the savory pulled pork. If, like us, you can only take so much spice before steam comes out your ears, the Peking Pork might be a little more your speed. The Peking barbecue sauce, though more mild than its piquant neighbor to the East, retains that delicious tanginess you can only find in Asian cuisine—or tacos, apparently. Both selections offered generous portions—a passerby asked us where we got the “burrito”—which proved great for eating but a little more difficult for taco assembly. But, hey, we’ll never complain about getting too much in a taco, especially when it’s so good.
