Kommie Pig BBQ Ribs and Chicken

A balmy December day and a watchful eye on the Twitter feed triggered our deployment toward MICA, to go all Defcon 4 on Kommie Pig’s decidedly post-Cold-War menu. After successful bilateral negotiations for BBQ chicken, smoked ribs, and pulled pork, plus two sides each, we launched all missiles for the full complement and waddled away with collards, macaroni salad, baked beans, homemade potato salad and coleslaw, and hand-cut fries. The pulled pork was incredibly dense and tangy, with the taste of dry-rub spices, as opposed to being saucy, and it may be enough to cause wholesale defection to Union of Soviet Food Truck Kommie Pigs. The chicken and ribs, each perfectly slow-cooked and coated in a sweet, smoky sauce had us humming with our mouths full. Don’t miss the collards—just the right balance of stewy-chewy greens, not too gloopy or sour—and double-don’t-miss the first-among-equals homemade potato salad with a bright infusion of dill.
