What do 18 peppers, raspberries, habaneros, lime zest, walnuts, chocolate, and pine nuts all have in common? They’re all types of chicken wings cooked up by Joe Squared chef Joe Edwardsen. Known for his pizza styles, Edwardsen turned his ample culinary abilities to chicken wings. A casual inquiry at the Power Plant Live location turned up that the restaurant gets its chicken from the local Springfield Farms and gives the wings a preparatory bath of white vinegar. Joe’s does the traditional buffalo style, but it’s the unique combinations and intricate balance of several flavors that make Joe’s wings fly high above the rest. The pizza is still good, but damn, those raspberry/habanero or 18-pepper wings should be illegal.
