Say you and the love of your life like going out, but just don’t make the time to do it that often. You enjoy trying the new hotspots but sometimes forget that such spots, being hot, require reservations. So you get there and the hostess sees the disappointment on your face when she tells you they’re booked, and she suggests you try the bar and walks you over to two open seats. The bartender is fabulous, complimenting you on the mix of appetizers, salads, and sides you’ve ordered and keeps the signature cocktails coming with panache. The service impeccable, the meal memorable, and you leave looking forward to returning—which you do, repeatedly—and walking in and immediately asking, “Do you have any seats at the bar?”
