Sit in the Dogwood’s dining room on a Thursday night and inevitably someone at every table is eating the fried chicken special. The breast and thigh—from Lancaster County chickens—are classic, marinated in buttermilk and fried until mahogany brown outside, creamy pale inside, and tender to the tooth. At $17, this bird doesn’t come cheap, but consider the sides—potatoes laced with cheddar, savory bitter greens, and a flour-dusted biscuit. Every night should be Thursday.
