Sometimes we have no idea what goes through people’s brains. Breading fish destined for a taco? The tortilla has enough carbs. Same goes for smothering fish in any kind of sauce before putting it inside the tortilla: Why make fish taste like taco seasoning out of a packet? The good folks at Sal’s Seafood, a great stop for fresh, ocean eating in general, know the best way to serve the fish taco is to stay out of the way. Tasty whitefish is grilled and then lightly tossed with some red onion and fresh cilantro before it’s served open-faced on a pair of corn tortillas with red and green salsa and fresh lime wedges on the side. Season to taste, and then resist the urge to order a dozen.
