We tried. We trekked out to a much-praised shall-not-be-named crab-cakery and laid down our dough and hoped for the Best. But it wasn’t. The crab wasn’t from Maryland, the portions were generous but the flavor was meh, and after it was all over we just wished we’d spent that money on a crab cake from Faidley’s. All the years of hype and lines of expectant tourists have not diminished the perfection of these huge, delicately spiced cakes, dense with sweet, sweet crab. Yeah, they’re expensive, but they’re filling, and, you know, it would take most of us like an hour to dissect that much meat from a crab. As long as you’re shelling out—har, har—you might as well go for the lump.
