Though all the bartenders at McCabe’s are friendly, our eyes light up when we walk in the door and see Cora Flynn-Williams behind the bar. Funny and fun to talk to, she always remembers your name and is likely to introduce you to the people sitting next to you, if you’re so inclined. She’s laid-back, she’s warm, and if you’re there at the right time, she might even have a baby on one hip while she pours you a draft. But if Cora’s working, skip the beer and order whatever cocktail she’s concoct-ailing that evening. She grows some of the ingredients—especially herbs like jasmine or thyme—herself, and the back bar features mysterious glass beakers and jars where she infuses and steeps and intensifies flavors. Strawberries, basil, watermelon, bay leaves, muddled cucumber, vodka, rum, gin—the ingredients are different every time, but the result is never disappointing and often revelatory. And if you want something more traditional, Cora happens to mix the best whiskey sour we’ve ever had
